How does one line a round pan with parchment without causing one's cake to ruffle around the edges? A round in the bottom and a strip on the sides? Must I? Your photo doesn't reveal any paper. I am going to make this cake!

Hi Elisabeth! You have eagle eyes, you’re right there’s no paper on the sides of my tin. I cut a round of baking parchment that I line the bottom of the tin with, then use a baking spray on the sides. When the cakes comes out of the oven, I run a knife round the edge between the tin and the side of the sponge. I find that the cake comes out with straighter sides when I do it this way. This isn’t a method for everyone though, so if you prefer not to make this extra step, then I’d recommend a strip of paper running round the sides. I’d love to hear how you get on making the cake!

Probably! It’ll require a bit of elbow grease, but as long as the sugar, oil, and eggs are well-mixed, it should be fine ❤️ let me know if you try it!
